Baigan Ka Bharta | Brinjal Bharta

Ingredient:

- Oil               1/2 Cup
- Brinjal (Baigan) (Washed & Pat Dried)    1/2 Kg
- Onion (Piyaaz)     1 Cup
- Garlic ginger paste (Lehsan adrak paste)   1 tbsp
- Cumin Seed ( Zeera)      1 tbsp
- Turmeric Powder (Haldi)   1 tsp
- Red Chilli Powder (Lal Mirch)   2 tsp
- Chaat Masala      1 tsp
- Salt ( Namak)       To Taste
- Coriander Leaves      For Garnish

Direction:

- Roast Brinjal (Baigan) directly on the flame carefully.Keep rotating until outer layer is burnt.
- Remove burnt layer carefully and mash it.
- Heat oil in a pot. Add onion and cook until onions are light brown.
- Add garlic ginger paste and saute in a minute.
- Add cumin seed and saute well.
- Now add turmeric powder, red chilli powder, salt and mix well. Add little water and saute all spices for few minutes.
- Add mashed brinjal (baigan) and mix well.
- Now add chaat masala and cook until oil separates.
- Simmer for 1 - 2 minutes.
- Serve hot. Garnish with coriander leaves
