Beef Paya (Trotter) Recipe
Ingredients:
- Oil (For meat and bones) 1 tbsp
- Beef trotters (Beef Paya) 1 1/2 (clean with warm water
- Beef meat and bones 1 kg (clean with warm water)
- LLarge onion (Pyaaz) 1 1/2
- Large Tomatoes (Tamatar) 2
- 1 Garlic(Lehsan) head for boiling Paya
- GGinger ( Adrak) 1 1/2 inches
- Red Chilli Powder (Lal Mirch) 1 tbsp
- Turmeric Powder (Haldi) 1 tsp
- All Spices Powder (Garam Masala) 1 tbsp
- Salt (Namak) To Taste
- Water As Needed
Directions:
To prepare Paya:
a- Put water and paya in a big pan. On first boil after few minutes, throw away the water to make it more clean.
b- Then Put water again with Paya.
c- Add 1 head of garlic, Salt and turmeric powder.
- Cook in medium flame, when it comes to boil turn flame to low.
In a low flame, Cook for 8-10 hours (In case of goat paya, Cook for 3-5 hrs).
To prepare Meat and Bones:
a- Saute Onion slices in 1 tbsp of oil.
b- After few minutes, add meat and bones. Add paste of ginger and garlic.Once meat turns towards brown, tomatoes, red chilli powder, all spice (garam masala) powder, and salt . Mix well and saute.
c- Once meat water is dried, add water to cook for 1-2 hrs or until the meat is half cooked.
- Once Paya is well done and cooked and you have thick gravy, mix meat and bones masala that we prepared in a Paya Gravy. Mix and cook until meat is completely tender.
You can add more water if consistency is more thick.
- Add green coriander and green chilli. Serve with naan.
